
I just mashed potatoes with milk and butter and then added cheese. You could use grated cheese or creamed cottage cheese.
Scoop into a non stick muffin pan/tray.
Sprinkle with chia seeds or add chia seeds through the mixture.

I also added a blob of butter on top and sprinkled some sesame seeds before popping them into the oven at about 180c for 15-20 minutes or until golden brown on top, yum!
You can add any of the following ingredients plus more to POTATO:
- Cheese -grated or creamed cottage cheese
- Chia seeds
- onion/shallots
- sesame seeds
- bacon (diced bacon grilled first would be beautiful)
- salmon pieces
